It is a kind of natural pigment extracted from red radish. The main ingredient is anthocyanins. The amaranthine powder can easily absorb damp. After absorbing damp, it becomes lump, but doesn't affect its use. It is soluble in water, alcohol and solution of water and alcohol, but insoluble in oil and absolute alcohol. The PH value can influence its hue and stability. At PH 2.0-6.0, the color is stable salmon pink; at PH 7.0, it is blue: at PH above 7.0, it is unstable green .

Application: it can be used in the coloring of wine, sodas, juice drink, jam and candy.
